The editor-in-chief of The New York Times, a former newspaper, has traced the origins of a poorly cooked steak he had recently back to the institution of American slavery. I knew the moment I experienced this travesty that its origins must lie in America's history of slavery. Mr. Editor-In -Chief went on to pen a 25-thousand word essay for the Times Sunday magazine entitled, "Why Can't I Get My Rib Eye Cooked the Way I Want It? Slavery is to Blame." The essay reads in part, "Perhaps you believe this is a great country founded on the highest ideals, but that's because you were not forced to suffer the outlandishly overcooked steak that fell to my lot last Thursday evening which, as I'm sure you know, is the maid's day off." there also has been a decline in life expectancy due to poor dietary habits Bad food is cheap and the best stuff is expensive, plus the average person is too stupid to even try and optimize their diet. One of the biggest challenges for global sustainability is maintaining a level of output which is sufficient to feed the earth's population while also increasing the quality and reducing the damage done by what is produced. We seem to have output under control for now, but high quality and more sustainable food sources are considered a luxury whereas what most people buy comes from a factory farm or a Monsantos field. We have the technical capability to feed the earths population, and even to increase the quality of what is produced and decrease it's impact on the environment, but in capitalism it is all about where the money goes. Our current agricultural model is about creating the greatest output at the smallest cost, it is about selling the most chickens rather than making sure those chickens are nutrient dense, ethically raised and environmentally friendly. And even though there are a few farms here and there who's chickens are more nutrient dense, ethically raised and environmentally friendly they are more expensive because they aren't subsidized by the government.
