Mac now has a bootcamp option which allows you to boot up in either Windows or Mac OSX. With that in place there is virtually nothing you can't do on a Mac that you could on a PC, but with many fewer problems. I made the switch and haven't regretted it yet. Go for the Mac.
One of the purposes of a rubric is to give students the expectations right up front. It is a communication tool that shows the student exactly how they will be evaluated and gives them the opportunity to complete their work based on known expectations rather than hoping they are giving the instructor what is expected.
