I would say Chinese, because not only do not many people use it, so would look good on a CV but also because China is quickly becoming the worlds biggest super power.

Spanish. Try hiring a day laborer to do some Manuel labor without using Spanish :-)

Depends. I find Latin to be very useful, but that's because I've been known to spend my days reading ancient Latin texts, and so knowledge of Latin, in such a case, is extremely important. Most people, people who don't waste their lives reading ancient documents, would probably find more use in a language such as German, Spanish or French. I disagree with Chinese (any variety) being of most usefulness simply for purposes of difficulty; you don't get the same bang for your buck with Mandarin as you do with the other most common European languages, at least if English is your first language.

I will say French because a person feels so good inside when he is speaking it.
